Recupera e ricicla in cucina. 150 ANNI - UN “CAPITALE” DI TRADIZIONI</a> <span style="font-family: verdana; font-size: large;">Come ogni anno </span> <a href="https://www.lesquisivoglie.com/">Le Squisivoglie</a> <span style="font-family: verdana; font-size: large;">si sono date da fare per promuovere gli eventi che riguardano questa nostra bella Italia, nello specifico vogliono festeggiare insieme a tutti noi i 150 anni dalla proclamazione di Roma capitale d'Italia</span><b style="background-color: #f6f6f6; color: #333333; font-family: "Roboto Slab", serif; font-size: 14px; text-align: justify;"> . </b><span style="background-color: #f6f6f6; color: #333333; text-align: justify;"><span style="font-family: verdana; font-size: large;">Per l'occasione i partecipanti al contest devono re-interpretare una delle tante ricette della tradizione romana e io ho scelto LA TRIPPA, un piatto antichissimo una volta considerato piatto povero in quanto veniva utilizzata una parte " non nobile" del bovino; ho scelto questo piatto tra le tantissime ricette romane, perché mi ricorda tanto mio padre, lui adorava questo piatto e lo preparava spesso, mi sembra di vederlo ancora tutto intento nella accurata pulizia della trippa ... La ricetta richiedeva prima una lunga preparazione, molto laboriosa per la pulizia e lunga come tempo ... oggi fortunatamente non é più cosi in quanto in macelleria troviamo la trippa che ha già subito il trattamento più lungo ed é già precotta perciò la realizzazione del piatto risulta più veloce 😉 Ingredienti: KG1,500 di trippa precotta, 3 carote, un gambo di sedano, uno spicchio di aglio, una cipolla media, olio EVO, passata di pomodoro, mentuccia, sale & pepe q.b. peperoncino Le Squisivoglie tagliato a filetti sottilissimi, pecorino romano grattugiato.</span></span><br /><p></p><div class="separator" style="clear: both; Una volta fredde aggiungere un uovo intero, la mortadella tagliata a pezzetti, il grana padano grattugiato e il pangrattato, amalgamare bene il tutto e formare le crocchette.</span></span><br /><div class="separator" style="clear: both; Ho salato,pepato e messo un pizzico di saporita, con un mixer ad immersione ho frullato il tutto.</span></p><p><span style="font-size: large;">Ho affettato i panini e li ho fatti tostare. <span style="font-size: x-large;">2 patate lesse</span><br />
<span style="font-size: x-large;">gr.200 circa di farina ( io semolato rimacinato)</span><br />
<span style="font-size: x-large;">succo e scorza di un limone e di un'arancia</span><br />
<span style="font-size: x-large;">gr.5 di lievito di birra sciolto in 3 cucchiai di latte</span><br />
<span style="font-size: x-large;">gr 100 di zucchero + la quantità per spolverizzare</span><br />

<span style="font-size: x-large;">La ricetta che vi propongo sono degli ottimi involtini di verza ripieni di riso al ragù bianco.</span><br />
<span style="font-size: x-large;">Ingredienti e dosi per 2/3 persone:</span><br />
<span style="font-size: x-large;">6 foglie di verza</span><br />
<span style="font-size: x-large;">mozzarella grattugiata</span><br />
<span style="font-size: x-large;">gr 150 di riso</span><br />
<span style="font-size: x-large;">gr.100 di macinato misto (bovino e suino)</span><br />
<span style="font-size: x-large;">mezzo bicchiere di vino bianco</span><br />
<span style="font-size: x-large;">gr.50 di grana padano</span><br />
<span style="font-size: x-large;">un pochino di pangrattato</span><br />
<span style="font-size: x-large;">trito di carota sedano e cipolla</span><br />
<span style="font-size: x-large;">sale e pepe qb</span><br />
<span style="font-size: x-large;">olio EVO</span><br />
<span style="font-size: x-large;">Procedimento:</span><br />
<span style="font-size: x-large;">lessate il riso in abbondante acqua salata e lasciatelo un pochino al dente, nel frattempo sbollentate per un paio di minuti le foglie di verza.</span><br />
<span style="font-size: x-large;">Preparate il ragù bianco facendo soffriggere il trito di verdure in olio EVO, aggiungete il macinato e fate sfumare con mezzo bicchiere di vino bianco...salate e pepate qb!</span><br />

<span style="font-size: x-large;">Eccomi carissime, periodo frenetico il mio, tra lavoro e famiglia che non mi consentono di pubblicare sul blog con frequenza, ma oggi vi propongo una ricetta dolce dal sapore nostalgico delle buone merende di una volta, un sapore che mi riporta alla mia adolescenza e ai tanti dolci poveri che spesso mia nonna preparava!</span><br />
<span style="font-size: x-large;">Queste focaccine con ricotta sono facili e veloci da preparare, in pochissimo tempo otterrete un dolce goloso 😉</span><br />
<span style="font-size: x-large;">Ingredienti e dosi per 12/14 focaccine:</span><br />
<span style="font-size: x-large;">gr.250 di ricotta fresca ( ben sgocciolata)</span><br />
<span style="font-size: x-large;">gr.200 circa di <a href="https://www.galleu.com/prodotto/semolato-rimacinato-di-grano-duro-1-kg/">semolato rimacinato Molino Galleu</a></span><br />
<span style="font-size: x-large;">2 uova intere</span><br />
<span style="font-size: x-large;">1 arancia ( scorza e succo)</span><br />
<span style="font-size: x-large;">1 vanillina</span><br />
<span style="font-size: x-large;">2 cucchiaini di lievito vanigliato per dolci</span><br />
<span style="font-size: x-large;">4 cucchiai di zucchero + un pochino per la superficie delle focacce</span><br />
<span style="font-size: x-large;">1 fialetta gusto rum ( o se preferite anice)</span><br />
<span style="font-size: x-large;">uva sultanina ( quantità a piacere)</span><br />
<span style="font-size: x-large;">Procedimento:</span><br />
<span style="font-size: x-large;">grattugiate l'arancia e poi spremete il succo, mettete la <b>scorza</b> nella ricotta e nel <b>succo </b>ammorbidite l'uvetta (per almeno 10 minuti)...</span><br />
<span style="font-size: x-large;">aggiungete alla ricotta le 2 uova,la vanillina,lo zucchero,la fialetta aroma rum ( o anice), amalgamate il tutto, poco alla volta aggiungete <a href="https://www.galleu.com/prodotto/semolato-rimacinato-di-grano-duro-1-kg/">il semolato</a> e l'uvetta con tutto il succo dell'arancia,infine incorporate i 2 cucchiaini di lievito vanigliato, sino ad ottenere un impasto morbido piuttosto asciutto.</span><br />

<span style="font-size: x-large;">Buona giornata a tutte, la ricetta che vi propongo oggi vede protagonista un ortaggio tipico invernale, il cavolfiore, un ortaggio non molto amato da tanti in particolar modo per il brutto odore che rilascia durante la cottura, ma con pochi accorgimenti il problema si può mitigare con l'aggiunta di un cucchiaio di aceto nell'acqua quando si devono lessare, oppure in caso di diverso metodo di cottura, con un panno imbevuto di aceto sul coperchio della pentola!</span><br />
<span style="font-size: x-large;">Ingredienti per questo cavolfiore con olive e capperi:</span><br />
<span style="font-size: x-large;">un cavolfiore di circa 1 chilo</span><br />
<span style="font-size: x-large;">olive verdi denocciolate ( quantità a piacere)</span><br />
<span style="font-size: x-large;">un cucchiaio di capperi sottaceto</span><br />
<span style="font-size: x-large;">un filetto di acciuga</span><br />
<span style="font-size: x-large;">sale e pepe qb</span><br />
<span style="font-size: x-large;">peperoncino</span><br />
<span style="font-size: x-large;">aglio e prezzemolo tritati</span><br />

<span style="font-size: x-large;">Procedimento:</span><br />
<span style="font-size: x-large;">tagliate il cavolfiore e dividetelo in cimette, lavatelo molto bene e lasciatelo a bagno per almeno mezz'ora in acqua fredda...</span><br />
<span style="font-size: x-large;">immergetelo in abbondante acqua bollente e leggermente salata, cucinatelo sino a che non è bello morbido ma non stracotto !!!</span><br />

<span style="font-size: x-large;">Scolatelo e mettetelo in una capiente padella, aggiungete le olive verdi, i capperi, aglio e prezzemolo, peperoncino (a piacere),un filetto di acciuga ( che si scioglierà in cottura), olio EVO; proseguite la cottura a fiamma media per circa 10 minuti rigirando spesso affinché i sapori leghino tra di loro, se necessario aggiungete un pizzico di sale e di pepe nero.</span><br />

<span style="font-size: x-large;">la prima cosa da fare è preparare la zucca, sbucciatela, tagliatela a grossi dadini e lessatela sino a che non diventa morbidissima, scolatela e lasciatela raffreddare nel cola pasta cosi che si asciuga bene... quando è ben fredda frullatela con un mixer.</span><br />
<span style="font-size: x-large;">Amalgamate ora tutti gli ingredienti, semola, zucca,uovo,zucchero,limone,strutto,vanillina e il lievito sino ad ottenere un impasto morbido. Fate riposare per mezz'ora.</span><br />

<span style="font-size: x-large;">gr. 450 di semolato rimacinato + gr.50 per il piano di lavoro;</span><br />
<span style="font-size: x-large;">una bustina di lievito di birra disidratato (Mastro fornaio Paneangeli)</span><br />
<span style="font-size: x-large;">acqua q.b.</span><br />
<span style="font-size: x-large;">2 cucchiai di olio EVO</span><br />
<span style="font-size: x-large;">1 cucchiaino di zucchero</span><br />
<span style="font-size: x-large;">sale q.b.</span><br />
<span style="font-size: x-large;">Preparate la pasta amalgamando nell'ordine:450 grammi di semolato, una bustina di lievito di birra e un cucchiaino di zucchero, aggiungete poi pian piano l'acqua e i 2 cucchiai di olio EVO, infine il sale...lavorate bene l'impasto che deve risultare morbido; formate una palla e lasciate lievitare per almeno 2 ore in un contenitore sigillato con pellicola.</span><br />
<span style="font-size: x-large;">Trascorso il tempo di lievitazione preparate tutti gli ingredienti per la farcitura delle pizzette, questi quelli che ho utilizzato io:</span><br />
<span style="font-size: x-large;">salsa rustica di pomodoro arricchita con olio EVO, un pizzico di sale</span><br />
<span style="font-size: x-large;">olive nere denocciolate</span><br />
<span style="font-size: x-large;">capperi</span><br />
<span style="font-size: x-large;">mozzarella grattugiata</span><br />
<span style="font-size: x-large;">filetti di acciuga</span><br />

<span style="font-size: x-large;">in una pentola mettete dell'acqua e portatela a bollore...nel frattempo sbucciate le melanzane e tagliatele a dadini, quando l'acqua inizia a bollire salate, versate le melanzane e cucinatele per circa 10/12 minuti o sino a che diventano belle morbide.</span><br />

<span style="font-size: x-large;">Scolateli e lasciate raffreddare in un colapasta; controllate le vongole e vedrete che sul fondo del recipiente si sarà depositata della sabbia, risciacquate bene e ripetete l'operazione per un ulteriore mezz'ora cosi da avere la certezza che abbiano spurgato bene.</span><br />
<span style="font-size: x-large;">In una padella capiente versate l'olio EVO, le vongole ben risciacquate,uno spicchio di aglio, il prezzemolo tritato e le vongole, fatele aprire su fiamma vivace, aggiungete il vino bianco, abbassate la fiamma e fate sfumare.</span><br />
<span style="font-size: x-large;">Tagliate i pomodorini e i polpi a pezzetti e aggiungeteli alle vongole, proseguite la cottura a fiamma bassa per 10 minuti, spegnete e lasciate riposare un pochino prima di servire con crostini di pane abbrustolito</span><br />

<span style="font-size: x-large;">2 uova intere</span><br />
<span style="font-size: x-large;">gr. 120 zucchero semolato</span><br />
<span style="font-size: x-large;">scorza di 1 limone bio</span><br />
<span style="font-size: x-large;">2 bustine di vanillina</span><br />
<span style="font-size: x-large;">ml 200 circa di olio di semi di girasole</span><br />
<span style="font-size: x-large;">1 pizzico di sale</span><br />
<span style="font-size: x-large;">un barattolo di marmellata di albicocche</span><br />
<span style="font-size: x-large;">Procedimento:</span><br />
<span style="font-size: x-large;">in una terrina mettere le 2 uova,la scorza grattugiata del limone, lo zucchero, la vanillina, il sale e l'olio di girasole, mescolare bene e aggiungere pian piano le due farine miscelate tra loro, amalgamare bene il tutto, formare un panetto e fate riposare una decina di minuti... la frolla deve essere bella liscia e non si deve appiccicare ne alle mani ne al piano di lavoro!!!</span><br />
<span style="font-size: x-large;">Dopo aver lasciato riposare l'impasto, stenderlo con il mattarello su un foglio di carta forno, trasferite direttamente sulla teglia e ritagliate la pasta in eccesso</span><br />

<span style="font-size: x-large;">ml 500 di panna da montare già zuccherata</span><br />
<span style="font-size: x-large;">gr.250 di mascarpone</span><br />
<span style="font-size: x-large;">gr.100 di robiola</span><br />
<span style="font-size: x-large;">ml 250 di yogurt al limone</span><br />
<span style="font-size: x-large;">1 fialetta aroma limone</span><br />
<span style="font-size: x-large;">1 limone</span><br />
<span style="font-size: x-large;">4 fogli di colla di pesce</span><br />

<span style="font-size: x-large;">iniziate con il foderare il fondo dello stampo con la carta forno,richiudete bene con la cerniera avendo cura che resti ben saldo l'incastro 😉Fatto ciò mettete i biscotti dentro una busta e con l'aiuto di un mattarello sbriciolateli sino a ridurli in farina ( naturalmente se avete un tritatutto farete prima)</span><br />

<span style="font-size: x-large;">Mescolate lo zucchero a velo con la maizena,aggiungete il succo di limone e l'acqua,portate a leggera ebollizione fino a che inizia ad addensarsi,mettete qualche goccia di colorante giallo e lasciate raffreddare. Versate sulla cheesecake e distribuite la gelatina uniformemente,rimettete in frigo per altre 2 ore.</span><br />
